"When you come to Eleven Madison Park, we're trying to create an experience," he adds. "From the first moment you walk into the restaurant, from the first bite to the middle (courses) to the end, we have total control over that. When you come to Eleven MadisonPark, it's almost like going to see a show."
"Although our style is differrent, I just love so much what they're doing at Frasca," Under Armour Shoes Rebel Sport he says. I ate there the last time about two years ago. It was hands down one of my best meals. It was just so good."
Says Mackinnon Patterson: "There's a degree of preciousness in their food. It's very beautiful."
Renowned guest chef to cook at Frasca
Humm has maintained a friendship with Mackinnon Patterson and Frasca Co owner Bobby Stuckey, with whom he shares an interest in marathon running.

Humm and Mackinnon Patterson met in 2005, when both had been selected as Food and Wine's 10 best new chefs. Humm, who was then cheffing at a hotel restaurant in San Francisco, was Frasca's first guest chef in early 2005, a few months after the restaurant opened. Other notable chefs have followed.
Humm describes his food, which received four stars from the New York Times, like this: "Our style is modern, but it's still recognizable. A carrot tastes like a carrot, and beef tastes like beef."

Creating Humm's very different style of food requires tools that Frasca didn't have in the kitchen, such as special molds for chocolate and liquid nitrogen.
"What I'm looking forward to most is the energy he's bringing to the staff and the community," he says "We simply don't have restaurants like this in Colorado."
Mackinnon Patterson says he's excited that Humm is cooking in the restaurant.

Of the latter, Mackinnon Patterson says, "I don't know how to use it. I don't even know where to get it."
That direction could hardly be more different from the Friuli inspired cuisine of Frasca.
Humm also is very complimentary of the food at Frasca.
York Chef Daniel Humm of Eleven Madison Park and his crew are taking over Frasca for an evening, offering a five course dinner plus an amuse from the restaurant, which this fall was awarded three Michelin stars.
"We completely turn the restaurant over to them," says Frasca Chef and Co owner Lachlan Mackinnon Patterson. "We are the support in order for them to be able to essentially have Eleven Madison Park in our restaurant. But the culinary direction is entirely theirs."

However, such obstacles have been overcome. Frasca will run the service and complete certain types of prep work, but Humm, his partner Will Guidara, and two Eleven Park Madison sous chefs will be in charge of the food.
